Question:

Should I be wary of a Contractor who doesn't want to meet at his place of business?

Answer:

Yes you should. As I am sure you are aware, you can tell a lot about a person by their surroundings. If a Contractor is hesitant to set up meetings at his office, chances are he either doesn't have one, or is embarrassed with the one he has. You should be eager to see his operation, employees, vehicles, showroom, Etc. If a Contractors office or building is disorganized, unkempt, or incomplete, good bet that's how your project will end up. Checking out his operation and the way he conducts his business can tell you a lot about who you are dealing with.

Don't buy the line about keeping overhead down, in remodeling an organized place of business is as important as a hammer.
